A few things genuinely help: booking around nap times so they sleep through the boring stretch, boarding early to get settled (or boarding last to burn off energy, depending on your kid), and for the ear-pressure meltdown at takeoff and landing, waiting until the plane's actually climbing before the bottle or a chew so it lands right when they need it. And if they're under two, a paid seat with their own car seat can be worth every penny.
